Not All It's Cracked Up To Be

The Pony has been cooking more frequently, rather than ordering out. A recent effort was an omelet. That's it. Just eggs and cheese.


The Pony said it was a 3-egg omelet.


Here you can see the added Muenster cheese.


Served up on a mini cafeteria-style tray that I found at 10Box. I bought us each four trays. They only came in pink and green, so we have two of each. The green does this omelet no favors! But I imagine the pink would have made it look worse.

Anyhoo... The Pony reported that next time, it will probably be a 2-egg omelet, because it got cold 2/3 of the way through eating it. And perhaps a slice of toast next time. I agree. Those other compartments need something to make the omelet look less lonely. Toast. Maybe an apple.

I once made a three egg omelette and found it to be too much, so I stick with two eggs now and add finely chopped spring onions (scallions) which get softened in some butter before the egg mixture is added to the pan.

For next time, The Pony asked what vegetables I thought would go well in it. I said a lot of people add mushrooms, or spinach, but I know they're not liked by The Pony. Another option was onions, and The Pony declared that yes, a diced red onion sounded good.

I also add dried parsley for the colour interest and sometimes finely chopped bits of capsicum (bell pepper) either green or red or both if I have them handy. Sometimes I add chopped ham too.

The ham sounds good. The Pony doesn't like peppers either, I think.
