Monday was another long day at the Mansion. Okay, technically it was only a few minutes longer (regarding daylight hours) than the couple days that came before. But still, it felt much longer to Mrs. HM.
I started the morning by making two roaster pans of carrots/potatoes/onions/bacon. We have a very busy Christmas Eve, and our Christmas Dinner will be served before noon on Wednesday to accommodate Genius's frantic schedule. With my sister the ex-mayor's wife's annual Christmas Eve gathering getting us home late Tuesday night, there is no other time to get all the vittles ready for feastin'.
Anyhoo... while the vegetables finished roasting, I started on the potato salad. It's what I'm taking to Sis's event, though Ex-Mayor would prefer deviled eggs. Sorry. Can't do that this year. It's hard enough to get a few ready for Genius during this hectic time frame.
I took a short break to rest my groaning knees after putting away the vegetables and the potato salad. Then I put together a hash brown casserole, to be baked on Wednesday morning. It's a favorite of Friend. Sadly, there was no time at all to make Genius's favorite Green Bean Bundles. But he's getting the deviled eggs. Which I made from 6:00 to 7:30.
By then Farmer H was back home from delivering gifts and two of the three Oreo Cakes I had made the day before. Just in time to eat two deviled eggs to sample them. They met his approval.
At last, time for my supper. And lunch. I don't think the bites of carrot and potato salad and deviled egg filling count as a meal. Though they were tastier than the sandwich and chips I had for supper. I barely even missed my trip to town for scratchers. Not worth the hour away from the kitchen.
The Pony will be here to help me get things ready on Wednesday morning. Friend is also a big help, while Genius keeps Hick entertained in the living room. The only item left to actually prepare then will be the 7 Layer Salad. And two side salads, for finicky Genius and Pony. It will take at least an hour, but is doable, with The Pony fetching items for me so I can sit, and teaming up with Friend to get things in the oven at the right times.
Now it's 11:47 p.m., and I'm going to treat myself with one of my best old ex-teaching buddy Mabel's hand-made chocolate covered cherries.
Tuesday will be a busy day.
