A Poor Excuse For A Daily Blog

Tonight Farmer H had Poor Man's Chicken and Dumplings for supper. Not because we're poor. Because he asked for them. Perhaps a better name would be Poor Cook's Chicken and Dumplings. You can make it in 10 minutes. It takes five minutes to open the cans, and five minutes (no more, no less!) to boil the tortilla dumplings.

I think I've related this gourmet recipe before. It's six cans, people! Six cans! Or maybe three, if you don't want leftovers. Two cans cream of chicken soup, two cans chicken broth, two cans chicken, and six or eight flour tortillas, cut into dumpling size. Yeah. I'm sure I told you about this before, because I warned you not to use the whole-grain tortillas, because they will disintegrate! And you'll be left with Poor Sucks-To-Be-You Chicken Gruel. Anyhoo...consider this to be a summer rerun. Because I got nothin' else.

The dogs will enjoy the Poor Cook's Chicken and Dumplings, because they will be having Spoiled Dogs Cream of Chicken Dipped Stale Italian Bread. Hey! It will have a hint of chicken in it! They may not like the ground black pepper much. They should be glad they're getting a whiff of meat, rather than their usual old tortillas and stale chips and a mini Slim Jim. They get regular dog food in the morning, of course. This is just their evening snack. I think Jack was ready for it two hours early, because when I went outside to talk to Farmer H in Poolio, Jack ran around to the back porch and began licking the bottom of his empty food pan.

Oh, this sounds like a dish you could dish up for tours, if you ever happen upon someone who has a series of shacks and wants to set up a tour business...

OOOH! Yes! I could serve it in assorted mugs, modeled after the heads of the Hillbilly family.

Of course, the Hillbilly Mom head would be just right. The Pony's would be half full of air. The #1 Son mug would have words of wisdom printed on the outside. And the Farmer H head mug would be a family size serving. Because he has a really big head. In fact, as a toddler, #1 told him, "Dad, my head is big because I have a large brain. Your head is big, but it's empty."

At the risk of that just being a rhetorical question...I'll be foolish and list the recipe.

two cans of chicken broth
two cans of cream of chicken soup
two cans of white-meat chicken
about half a teaspoon of minced garlic
about half a teaspoon of ground black pepper
6-8 large flour tortillas, cut into sections about 2 inches square

bring the liquids and seasonings to a boil

dump in the tortilla sections and boil for 5 minutes EXACTLY!
(stirring helps keep it from sticking to the bottom)

remove from heat and stir in canned chicken

Yesterday, after a very busy weekend, I asked HeWho what he wanted for dinner. Beef Stroganoff. Could he pick something more labor intensive? Not having all the ingredients, I used ground beef instead of stew chunks, canned mushroom soup, not having mushrooms on hand. I doctored it up with some spices and then discovered I had no noodles and used spaghetti instead. He loved it. Men are strange.

Well...at least it was still BEEF. That was a lot of substituting! I never understood the love that my St. Louis work cronies had for Chili Mac. They would order out for lunch, and get CHILI MAC. Chili over spaghetti noodles. That's so wrong!
